Ingredients
- 1 tbsp olive oil
- 1/2 onion (diced)
- 1/2 lb dry lentils (rinsed)
- 3 large russet potatoes (peeled, diced)
- 3 1/2 cups water or vegetable broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 6 large tortillas
- Oil for crisping (optional)
Method
- Sauté onion in oil until tender. Add garlic powder and spices; toast 30 seconds.
- Add potatoes, water/broth, and lentils; simmer ~25 minutes until lentils are tender.
- Fill tortillas and roll tightly. Optional: pan-crisp with a little oil.
