Potato Lentil Wraps (Burritos)

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion (diced)
  • 1/2 lb dry lentils (rinsed)
  • 3 large russet potatoes (peeled, diced)
  • 3 1/2 cups water or vegetable broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 6 large tortillas
  • Oil for crisping (optional)

Method

  1. Sauté onion in oil until tender. Add garlic powder and spices; toast 30 seconds.
  2. Add potatoes, water/broth, and lentils; simmer ~25 minutes until lentils are tender.
  3. Fill tortillas and roll tightly. Optional: pan-crisp with a little oil.

Notes

  • Add salsa or avocado for freshness.
  • Batch-freeze assembled wraps before crisping.
