Ingredients
Banana Pudding
- 3 ripe bananas (mashed)
- 1 1/2 cups oat milk
- 1/2 cup coconut cream
- 1/3 cup organic cane sugar
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of salt
Tiramisu Cream
- 1 1/2 cups vegan cream cheese
- 1 cup coconut cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Assembly
- 2 cups strong brewed coffee (cooled)
- 20-24 vegan vanilla wafers or ladyfingers
- 2 bananas (sliced thin)
- 2 tbsp cocoa powder (for dusting)
Method
Banana Pudding
- In a saucepan over medium heat, whisk together oat milk, coconut cream, sugar, cornstarch, and salt until smooth.
- Cook, stirring constantly, until mixture thickens (~5-7 minutes).
- Remove from heat and stir in mashed bananas and vanilla extract. Let cool completely.
Tiramisu Cream
- In a large bowl, beat vegan cream cheese and coconut cream until smooth.
- Add powdered sugar and vanilla, then beat until fluffy.
- Chill until ready to use.
Assembly
- Briefly dip each wafer into the cooled coffee and layer on the bottom of a 9x13 inch dish.
- Spread half the banana pudding over the wafers, followed by half the tiramisu cream.
- Add a layer of sliced bananas.
- Repeat with another layer of dipped wafers, banana pudding, tiramisu cream, and bananas.
- Dust the top generously with cocoa powder.
- Chill in the refrigerator for at least 4 hours or overnight before serving.
Notes
- Use very ripe bananas for maximum sweetness and flavor.
