Ingredients

Banana Pudding

  • 3 ripe bananas (mashed)
  • 1 1/2 cups oat milk
  • 1/2 cup coconut cream
  • 1/3 cup organic cane sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt

Tiramisu Cream

  • 1 1/2 cups vegan cream cheese
  • 1 cup coconut cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Assembly

  • 2 cups strong brewed coffee (cooled)
  • 20-24 vegan vanilla wafers or ladyfingers
  • 2 bananas (sliced thin)
  • 2 tbsp cocoa powder (for dusting)

Method

Banana Pudding

  1. In a saucepan over medium heat, whisk together oat milk, coconut cream, sugar, cornstarch, and salt until smooth.
  2. Cook, stirring constantly, until mixture thickens (~5-7 minutes).
  3. Remove from heat and stir in mashed bananas and vanilla extract. Let cool completely.

Tiramisu Cream

  1. In a large bowl, beat vegan cream cheese and coconut cream until smooth.
  2. Add powdered sugar and vanilla, then beat until fluffy.
  3. Chill until ready to use.

Assembly

  1. Briefly dip each wafer into the cooled coffee and layer on the bottom of a 9x13 inch dish.
  2. Spread half the banana pudding over the wafers, followed by half the tiramisu cream.
  3. Add a layer of sliced bananas.
  4. Repeat with another layer of dipped wafers, banana pudding, tiramisu cream, and bananas.
  5. Dust the top generously with cocoa powder.
  6. Chill in the refrigerator for at least 4 hours or overnight before serving.

Notes

  • Use very ripe bananas for maximum sweetness and flavor.
  • Can be made a day in advance for best texture.
  • Substitute espresso for a stronger coffee flavor.
