Creamy Tuscan Tofu

Ingredients
Tofu
- 1 block firm tofu (pressed, torn into chunks)
- 1 tbsp cornstarch
- 1 tbsp olive oil
Sauce
- 1/2 medium onion (diced)
- 2 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1/4 tsp salt
- 1 tsp Italian seasoning
- 1 tbsp vegan cream cheese
- 1/3 cup tomato purée
- 1/3 cup water
- 1 handful fresh spinach (roughly chopped)
Serving
- 1 cup uncooked white rice (rinsed)
Method
Tofu
- Toss tofu with cornstarch; pan-fry in oil until golden on both sides. Set aside.
Sauce
- Sauté onion and garlic until fragrant. Add tomatoes and salt; cook until softened.
- Stir in Italian seasoning, vegan cream cheese, tomato purée, and water; simmer 3 minutes to thicken.
- Return tofu and fold in spinach until just wilted.
Rice
- Cook rice with 1 1/2 cups water until tender; rest covered 5 minutes. Serve with creamy tofu.
Notes
- Air fry tofu at 400°F (200°C) 12–15 minutes for extra crispness.
