Creamy Tuscan Tofu

Ingredients

Tofu

  • 1 block firm tofu (pressed, torn into chunks)
  • 1 tbsp cornstarch
  • 1 tbsp olive oil

Sauce

  • 1/2 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 tsp salt
  • 1 tsp Italian seasoning
  • 1 tbsp vegan cream cheese
  • 1/3 cup tomato purée
  • 1/3 cup water
  • 1 handful fresh spinach (roughly chopped)

Serving

  • 1 cup uncooked white rice (rinsed)

Method

Tofu

  1. Toss tofu with cornstarch; pan-fry in oil until golden on both sides. Set aside.

Sauce

  1. Sauté onion and garlic until fragrant. Add tomatoes and salt; cook until softened.
  2. Stir in Italian seasoning, vegan cream cheese, tomato purée, and water; simmer 3 minutes to thicken.
  3. Return tofu and fold in spinach until just wilted.

Rice

  1. Cook rice with 1 1/2 cups water until tender; rest covered 5 minutes. Serve with creamy tofu.

Notes

  • Air fry tofu at 400°F (200°C) 12–15 minutes for extra crispness.
