Ingredients

  • 3 tbsp extra virgin olive oil
  • 4 cups cherry tomatoes (whole)
  • 6–10 cloves garlic (peeled, whole)
  • 1 tbsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp black pepper (freshly ground)
  • 1/2 cup vegan cream cheese (softened)
  • 1 lb pasta of choice (cook al dente)
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup vegan parmesan (grated)

Method

Roast Tomatoes & Garlic

  1. Preheat oven to 425°F (220°C).
  2. Toss cherry tomatoes, garlic, olive oil, Italian seasoning, salt, and pepper on a sheet pan.
  3. Roast 20–30 minutes until tomatoes burst and garlic is tender.

Sauce

  1. Blend 3/4 of the roasted tomatoes with all roasted garlic, vegan cream cheese, and half the basil until smooth; adjust salt and pepper.

Pasta & Combine

  1. Boil pasta in salted water until al dente; reserve 1 cup pasta water and drain.
  2. Warm sauce in a large pan; fold in remaining roasted tomatoes.
  3. Add pasta and toss; splash in reserved water as needed for a silky sauce.
  4. Serve topped with vegan parmesan and remaining basil.

Notes

  • Add a pinch of red pepper flakes for gentle heat.
  • For extra richness, whisk 1 tbsp olive oil into the sauce off heat.
  • Use gluten-free pasta if desired.
