Chewy No-Bake Peanut Butter Dark Chocolate Oat Bars

Ingredients

  • 1 cup rolled oats
  • 1 cup puffed rice cereal
  • 1/2 cup natural peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp fine salt
  • 1/2 cup vegan dark chocolate chips
  • 1 tbsp coconut oil

Method

  1. Line an 8 inch square pan with parchment. Mix oats and puffed rice in a bowl.
  2. Warm peanut butter, maple syrup, vanilla, and salt on low until smooth; pour over dry mix and combine.
  3. Press into pan firmly. Melt chocolate with coconut oil; spread over top.
  4. Refrigerate 1 hour until set; slice into bars.

Notes

  • Add 2 tbsp chopped roasted peanuts for crunch.
  • Store chilled up to 1 week or freeze.
